Pineapple Slice Recipe

As promised and a little late I know but here it is, My lovely pineapple slice recipe. It is so easy to make and even easier to eat. Lovely in Summer as something cool eat and definately more-ish..

Ingredients:

* 1 large (600ml) Thickened Cream
* 2 x Cans crushed Pineapple Drained well
* 1/8 C Lemon Juice
* 1.5 packets scotch finger biscuits (any brand)
* 1 can condensed Milk (not skim)
* 1/4 C Coconut to sprinkle over top.

Beat with Beaters the cream until Thick as if making scones with Jam and cream. When think add can of condensed milk, well drained pinapple, lemon juice. Turn beaters back on and mix until combined.

In a single layer place scotch finger biscuits over the base of a container the slice can be served from (Tupperware Slice and store with Lid works well), sometime you may need to break a half biscuit up to fill in larger gaps along sides. Pour cream mixture onto the biscuits and sprinkle the coconut over the top. Place lid on container and Refridgerate for 12-24 Hours before serving. (Best if made the day before eating.)

Cut with a knife into generous peices and enjoy.....

Variation: I have added 1 fresh passionfruit pulp to mixture and this adds a nice change and a tropical taste. Crumbled Cadbury Flake can be sustituted for the coconut on top if you prefer.

Please enjoy this recipe and make sure to let me know how you go, it's very yummy and definately a crowd pleaser.

Watch for 2010 Events List as we will be making a recipes collection box/book to add your favourite recipe's to.

Choo Choo Card

This card has been made using the Choo Choo Stamp Set and Wheel Right on Track from the Spring Mini (Ends 30th November). I have LOTS of the current Sets in both the Mini and 2009-2010 Catalogue and would love to be able to offer you idea's for a set you either have or maybe thinking of getting. This is a very easy card: Stamp the Train and Carriages onto white or vanilla in bright coloured INK and cut out, Tear a peice of Designer Series Printed paper to form a mountain and adhere to card stock, I have used a A5 peice of Old Olive Card bone folded in half. I have placed a peice of string along the back of the engine and carriages to make it appear to be pulling along. Using 3-D foam mounts attach each carriage to the card. Place puffs of smoke coming from the Engine using White Craft INK pad.

Large Tag Punch Card

I have been very busy making LOTS of cards for the Girl Guides Fundraising Event I have been invited to. This Card is one I thought looks so cute and uses the Large Tag Punch which I know many of you have already purchased. The Christmas Crackers were made by punching out 4 Large tags (I have used SKI Slope Designer Series Paper) and placing a set of holes in the ends of each using the Double slot punch. This allows you to thread the Ribbon through and hold the 2 tags together. Cut some zig zags onto your inside tags. Using the Swirls from Season of Joy place some swirls and little silver flowers in the middle of the card at the top and this gives your Burst open effect. The greeting Merry Christmas is also from the Season of Joy Set. Place some foam Dimmensionals on the back of your Tag crackers and attach to your card.
