Lemon and Passion fruit Slice

This is the most simple, Easy to make and Yummy Slice Ever.

Lemon and Passion Fruit Slice:

Preheat oven to 180 degree's C

Ingredients:
BASE:
1 C SR Flour
1 C Coconut
1/2 C Caster Sugar
125g Melted Butter

Mix all BASE ingredients and spread over a lined small slice tin or square cake tin (I use baking paper). Pressing down firmly. Place in oven for approx 10 minutes while preparing topping mixture.

TOPPING:
1 Can Condensed Milk
2 Lemons Juiced
1 x Passion Fruit Pulp

Mix all TOPPING ingredients with a small whisk or spatula until they are creamy in appearance. Remove base from oven and allow to cool for 10 minutes then pour topping over base and return to oven for another 5-10 minutes until set.

PLEASE be guided by your own OVEN. If your oven is Hotter than others you will only need it to set for a few minutes, if you have a slower oven like mine it takes about 9-10 minutes.

Allow to cool and cut into squares. Refrigerate to store. Enjoy.
