Pineapple Slice Recipe


As promised and a little late I know but here it is, My lovely pineapple slice recipe. It is so easy to make and even easier to eat. Lovely in Summer as something cool eat and definately more-ish..

Ingredients:

* 1 large (600ml) Thickened Cream
* 2 x Cans crushed Pineapple Drained well
* 1/8 C Lemon Juice
* 1.5 packets scotch finger biscuits (any brand)
* 1 can condensed Milk (not skim)
* 1/4 C Coconut to sprinkle over top.

Beat with Beaters the cream until Thick as if making scones with Jam and cream. When think add can of condensed milk, well drained pinapple, lemon juice. Turn beaters back on and mix until combined.

In a single layer place scotch finger biscuits over the base of a container the slice can be served from (Tupperware Slice and store with Lid works well), sometime you may need to break a half biscuit up to fill in larger gaps along sides. Pour cream mixture onto the biscuits and sprinkle the coconut over the top. Place lid on container and Refridgerate for 12-24 Hours before serving. (Best if made the day before eating.)

Cut with a knife into generous peices and enjoy.....

Variation: I have added 1 fresh passionfruit pulp to mixture and this adds a nice change and a tropical taste. Crumbled Cadbury Flake can be sustituted for the coconut on top if you prefer.
